EASY ENCHILIDA SOUP
1 package Enchilada Seasoning by Twisted Pepper Co.
2 cans (10 3/4 oz) cream of chicken soup 98% fat-free with 30% less sodium
2 cup milk, (low fat or regular)
1 cup shredded reduced-fat Cheddar cheese (4 oz)
1 cup chicken (canned white meat chicken)
1 1/2 cup enchilada sauce made from Twisted Pepper Enchilada Seasoning Mix
3/4 cup crushed tortilla chips
In 3-quart saucepan, mix all ingredients except tortilla chips.
Cook over medium heat, stirring occasionally, until thoroughly heated and cheese is melted. Top individual servings with tortilla chips.
For a colorful, crunchy topping, use multicolored tortilla chips. Serves 6
