Directions
  • Sauce: Combine 1 package of Enchilada Seasoning with 1 (15oz) can tomato sauce, 1 (6oz) can tomato paste, 1 cup water. Simmer for 15 minutes, stirring often.

    Tortillas: Heat about 1/4” oil in skillet, fry tortillas in skillet over med-high heat for a few seconds per side, just long enough to soften and stack on plate.

    Enchiladas: Dip each tortilla in sauce and fill with your favorite meat or chicken, cheese, roll up and repeat procedure, set in prepared baking pan (spray with Pam and cover the bottom of pan with sauce), cover enchiladas with  remaining sauce. Sprinkle with 1 cup shredded cheese. Bake for 15 minutes @ 400°

    Yield: 4 cups sauce
