Directions

  • · 1 Package of Tortilla Soup Mix   Serves 8+

  • · 5 cups water

  • · 1 can (14 oz) diced tomatoes

  •    or replace tomatoes with 1 cup water.

  • · Whisk soup mix into water and tomatoes

  • · Bring to boil, stirring often

  • · Reduce Heat and simmer for 15 minutes

  •  

  • Variations: 1 (10 oz) can of chicken, 1 cup crushed  tortilla chips, 1 can Black Beans or Corn. Thinner soup, add less tortilla chips, thicker soup, add more tortilla chips.

  • Garnish with grated cheese, lime and tortilla strips.
