1 package Creamy Cauliflower Soup Mix Medium Size head of Cauliflower chopped OR: 1 bag of frozen cauliflower rice 4 cups water 2 cups water Bring to boil, stirring often Reduce heat and simmer for 15 to 20 minutes Variations: Add 1 cup sliced carrots, after cooking add 1/4 cup sour cream Makes about 10 cups -

· Medium Size head of Cauliflower—Chopped -
· OR Frozen Cauliflower Rice -
· 4 cups water, -
· 2 cups milk, or Half & Half -
· Bring to Boil, stirring often -
· Reduce heat and simmer for 15—20 minutes -

Variations: Add 1 cup diced carrots to mixture, after cooking stir in 1/4 cup Sour Cream -
Creamier: Puree soup after cooking and cooled, reheat -
Substitute Roasted Cauliflower for fresh cauliflower -
Garnish with cheese, bacon bits, and fresh parsley -
Yield: About 10, one cup servings. -
